  • Chicken breast (4 oz/ 113 grams)
  • Chilli powder (1/4 tsp)
  • Cayenne pepper (1/4 tsp)
  • Cumin powder (1/4 tsp)
  • Red onion (1/4 medium)
  • Red bell pepper (1/2 medium sliced)
  • Green bell pepper (1/2 medium sliced)
  • Yellow bell pepper (1/2 medium sliced)
  • Cooked quinoa (1/2 cup)
  • Parsley (1 tbsp)
  • Lime juice (1 tsp)
  • Garlic & ginger (1 tsp chopped)
  • Olive oil (1 tsp)
  • Salt & pepper (as per your taste)

  1. Mix chili powder, cumin powder, cayenne powder, salt, and pepper in a small bowl. Set aside.
  2. Take the sliced chicken on a plate and start adding half of the seasoning along with lime juice and ginner garlic paste. Marinate the chicken and set it aside.
  3. Now in a pan heat some oil and add the marinated chicken. Cook for some time. Now add onions and bell peppers. After cooking for some time, add the remaining seasoning and stir fry.
  4. Now you can mix quinoa with this mixture of chicken and peppers. Or you can keep quinoa on one side of the plate and this mixture on the other. Up to you.
