LOW CARB BEEF STUFFED TOMATO

INGREDIENTS
- Ground lean beef (8 oz/ 226 grams)
- 4 medium tomatoes
- Cheddar cheese (1 oz/ 28 grams)
- Sour cream (4 tsp)
- Red onion
- Lettuce
- Olive oil
- Taco sauce
- salt and black pepper

METHOD
- Add oil to a pan and cook onion for 5 minutes.
- Now add in taco seasoning and ground beef – cook until no longer pink.
- Flip over tomatoes so they are stem side down.
- Now carefully make six cuts but not to cut all the way through – carefully spread open wedges.
- Add taco meat into tomatoes and top with cheese, lettuce, and sour cream. Serve hot.
