TOFU SCRAMBLE

INGREDIENTS
- Yellow onion (1/2 medium)
- Red bell pepper (1/2 medium)
- Tofu (6 oz/ 170 grams)
- Zucchini (1/4 medium)
- Spinach (3 oz/ 85 grams)
- Turmeric (1/8 tsp)
- Olive oil (1 tsp)
- Salt & pepper

METHOD
- Add oil to a frying pan and fry the onion for some time. Now add bell pepper and sauté for 2 minutes.
- Now add in tofu, chopped zucchini, turmeric, salt, and pepper. Stir and cook for some time.
- Add spinach as well. Cook well and cover for 4 minutes on medium heat.
- Taste the tofu scramble and season with some salt and pepper as per your taste.
