TOFU SCRAMBLE

INGREDIENTS

  • Yellow onion (1/2 medium)
  • Red bell pepper (1/2 medium)
  • Tofu (6 oz/ 170 grams)
  • Zucchini (1/4 medium)
  • Spinach (3 oz/ 85 grams)
  • Turmeric (1/8 tsp)
  • Olive oil (1 tsp)
  • Salt & pepper

METHOD

  1. Add oil to a frying pan and fry the onion for some time. Now add bell pepper and sauté for 2 minutes.
  2. Now add in tofu, chopped zucchini, turmeric, salt, and pepper. Stir and cook for some time.
  3. Add spinach as well. Cook well and cover for 4 minutes on medium heat.
  4. Taste the tofu scramble and season with some salt and pepper as per your taste.
